|Canadian Gold Mussels Marinara
1 lb. (2 pckg)) Canadian Gold Mussels
1 tsp. Chopped garlic
1 Shallot finely diced
1 oz. Olive oil
2 oz. Diced red onion
3 oz. Diced red peppers
4 oz. Tomato sauce
Chopped parsley to garnish
Salt & pepper to taste
In a pan quickly sauté the shallots and garlic for 2 mins.
Add the red onion and peppers and continue to sauté until tender.
Deglaze with white wine and reduce until wine disappears.
Add the tomato sauce and let simmer for 20 mins.
Add the mussels and cover to create the steam to reheat the mussels.
Serve on a bed of noodles or rice.
Season with salt & pepper
Garnish with chopped parsley.
